Flying Fish is in Transition!
Christine decided to stay for 6 months after the sale was final in June and act as a consultant. Her Sous Chef, Princess Franada, has been promoted to executive chef. Meanwhile, Xiao has built a “development kitchen” in Redmond for his team to use for learning more about North American cuisine and experimenting with new dishes to introduce at Flying Fish.
Since Flying Fish was born, its menu items have rotated regularly to offer the freshest seafood. The most recent changes offer a wider variety and newer versions of existing Flying Fish dishes. Menu changes to reflect the recipe development aren’t expected for at least 2 months.
As for Christine, she is “happy to be just a Chef again” and plans to continue teaching. She thanks all of the staff and customers for support over the years. The current transition has been a dream situation, in which her original staff is kept in place and her vision understood.
